Roasted Veggie Bowl with Lemon Pesto Dressing

2-3 purple potatoes, cleaned, and chopped into 3/4" cubes
1/2 a small butternut squash peeled and chopped into 3/4" cubes
1 medium red onion, peeled and quartered
2-3 tbsp olive oil, separated

3 cloves of garlic, peeled and halved
1 bunch of broccoli rabe, chopped
1/2 cup prepared pesto
2 tbsp white wine vinegar
1 tbsp fresh lemon juice
zest of one lemon
1/4 cup extra virgin olive oil
