Rosemary Rustic Potato Salad

Whenever I am going to a family gathering this is the one salad they demand the most.

2 kilograms Chat Potatoes (skin on )
1 hand of Garlic (skin on)
1 bunch of Rosemary
50 milliliters of Extra Virgin Olive Oil
50 mililiters of Balsamic Vinegar
2 -4 tablespoons Seeded Mustard
10 grams Himalayan Pink Salt Flakes
10 grams cracked Black Pepper
Preheat the oven to 200C / 395F. Cut Potatoes in half and place in a pot to boil. Simmer till just cooked through. Strain and allow to cool. With a cloth lightly dry potatoes. In an oven tray place the olive oil, garlic cloves (skin on) and dried potatoes. Toss the ingredients lightly so the oil has caressed each ingredient. Pull the leaves off the rosemary and sprinkle over the top of the potatoes and season with the salt and pepper. Place the tray in the oven and bake for 45 minutes or until golden. Take the potatoes out of the oven and allow to rest for 5 mins. Sprinkle over the balsamic vinegar and seeded mustard then toss lightly. This salad may be served warm, hot or cold it tastes great either way.
