Rotisserie Chicken Enchiladas

These right here are my husband’s all time favorite enchiladas, and they have been for years. And for good reason. There is just something magical about Rotisserie chicken mixed with a creamy smooth sauce that transforms an ordinary dish into something spectacular!

1 ½ Tbs olive oil
1/2 medium onion, diced
3 garlic cloves, chopped
1 1/2 teaspoon ground cumin
1/4 cup flour
2 cups chicken stock
1/3 cup cilantro leaves, chopped
1 deli roasted rotisserie chicken (about 3 pounds)
Salt and freshly ground black pepper
8-10 flour tortillas
8 oz Monterey Jack cheese, shredded
2 cups salsa
Optional toppings: diced tomatoes, chopped lettuce, sliced olives and sour cream
