Salmon Ceviche with Onion, Tomato and Avocado

“Cook” the salmon in a zesty marinade.

1 cup sashimi-grade salmon, cut into cubes.
2 limes
¼ cup chopped onion
½ cup chopped tomato
½ chopped avocado flesh
2 tablespoon chopped green onions
¼ teaspoon sesame oil
½ teaspoon soy sauce
Prepare a dish (preferably with lid), spread out the salmon cubes at the bottom. Cut limes in half, squeeze out the juice and pour over salmon. Cover and marinade in refrigerator for 8 to 12 hours....
