Sausage Stir Fry over Rice

This easy stir fry is a go-to weeknight dinner, and you can mix it up with different vegetables.

1 cup uncooked medium grain rice, or substitute rice of your choice
1 tablespoon olive oil
12 ounces fully cooked sausage, any flavor you like, cut in half lengthwise and sliced into bite-sized pieces
1 yellow, red, or orange bell pepper, roughly chopped
8 ounces mushrooms, quartered
1/4 teaspoon seasoned salt of your choice, (or to taste)
2 handfuls grape tomatoes, halved
5 ounces baby spinach leaves
