This is so easy to make and perfectly portable to take along for a light lunch. And there are endless ways to change it up a bit. With only 6 ingredients it goes together in a flash. 16 ounces imitation crab meat
1 c up Olive oil reduced fat mayo
1 stalk celery
2 T green onions
1 tsp mustard
Pepper to taste
Chop the crab meat. In a medium size bowl mix all of the ingredients together until fully incorporated.Serve in a pita, on crackers, in a lettuce leaf, or a hoagie bun or just eat it with a spoon.
