Shakshuka (also spelled Shakshouka) is a dish of which eggs are poached in tomatoes, peppers, onions and spices. It has ties to the Middle East and North Africa. Shakshuka makes for a quick and healthy weeknight meal, or is terrific served for brunch!

½ Medium onion, sliced
½ Red bell pepper
2 cloves Garlic, smashed
1 cup Diced canned tomatoes and juices
¼ cup Tomato juice, from a can
