Light and bright shaved asparagus with lemon vinaigrette with pecorino - great as a side dish or to start as a salad.

for the lemon vinaigrette

2 tablespoons lemon juice
2 tablespoons champagne vinegar
1/4 cup extra virgin olive oil
1/4 teaspoon salt
1/4 teaspoon fresh cracked black pepper

for the asparagus

1.5 lbs asparagus
3-4 oz block Pecorino Romano cheese 2 oz grated plus more for shaving
salt
fresh cracked black pepper
