1 chicken breast, pounded thin
1 tbs organic unsalted butter
1 small shallot, chopped
1 (8 oz) package mushrooms, sliced
¼ cup sherry vinegar
¼ low sodium, chicken broth
1-2 cups egg noodles, cooked according to package directions
Salt & Pepper to taste
