Makes a beautiful and delicious side-dish, main course, or appetizer. And it's super-easy to make!

12 to 16 oz. medium shrimp, peeled and deveined
¼ cup lemon juice
3 tsp. fresh oregano, chopped
½ tsp. sea salt
½ tsp. white pepper
¼ cup red onion, chopped
3 tbl. olive oil
4 cups fresh spinach, stems removed
3 oz. feta cheese, crumbled
