Shrimp Risotto

Healthy and low-fat Italian favorite.

2 tablespoons olive oil
1 small white onion, finely chopped
1¼ cups uncooked Arborio rice
¼ cup dry white wine
3 cups reduced-sodium chicken broth
3 cups fresh spinach, chopped
1 pound (16 to 20 count) uncooked medium shrimp, shelled and deveined
2 teaspoons lemon zest (2 lemons)
2 tablespoons fresh basil leaves, chopped or ½ teaspoon dried basil
½ teaspoon dried oregano
2 tablespoons unsalted butter
¼ cup grated Parmesan cheese
Sea salt or kosher salt, to taste
Fresh ground black pepper, to taste
Heat olive oil in a large saucepan over medium heat. Add onion and cook about 5 minutes, or until softened. Add rice and cook, stirring constantly, about 1 minute. Add wine and simmer, until absorbed....
