Simple Shepherd's Pie

This classic comfort food has an unexpected kick from the seasoned beef, and has lower sodium from no added gravy. I make with both fresh and frozen ingredients depending on what's on hand. I often make a double batch of the filling and freeze for another night.

1 lb ground beef
1 tbsp Montreal steak seasoning
1/2 medium onion, chopped

1 pkg frozen peas (about two cups)
1 pkg frozen carrots (about 6 fresh carrots, chopped)

Instant potatoes, a serving for 6 according to package directions (about 3 cups of mashed potatoes)
Brown the beef, seasoning with Montreal steak seasoning and adding the onion about halfway through browning. Do not drain the beef. Combine vegetables with the beef and pour into a 2qt casserole dish. Top with mashed potatoes, If you wish, season the potatoes to taste with salt and pepper. Bake at 350 for 50-60 minutes, until the center is heated through. If the filling has been frozen, heat for 60-90 minutes or until heated through.
