Skillet Puffy Pancake is a one bowl, less than 30 minute, pantry items, extraordinary breakfast that will impress and delight your guests!

? cup sugar (optional)
1 teaspoon grated lemon zest (optional)
3 large eggs, room temperature
? cup whole milk, room temperature
¼ teaspoon pure vanilla extract
¼ teaspoon cinnamon

½ stick unsalted butter, cut into pieces
