For the onions:
2 Tsps Olive oil
2 Medium onions, sliced about 1/2 inch thick

1 Tbsp olive oil
2 Large green Bell peppers, thinly sliced
For the cauliflower rice:
1 Large head cauliflower, cut into florets (about 6 cups florets)
