1 large russet potato ( peeled and diced into bite-sized pieces )
2 whole carrots ( diced )
4 cups low sodium chicken broth
1 cup water
2 cans cream of celery soup (NOT diluted)*
½ teaspoon salt
½ teaspoon pepper
1 pound Velveeta cheese ( cubed )
2 cups grated mild Cheddar cheese
12 ounces (about 2 cups) diced cooked ham**
