Slow Cooker Lamb with Chinese White Turnip

31

This is a very warm dish for the early spring and all seasons. Lamb leg with bone is among the best of a sheep – it is full of chewy lean muscles. White turnip is a Chinese people’s favorite to serve with slow cooker lamb. The turnip well absorbs the flavor of the lamb, and so tender as if it could melt in the mouth … Something with “no less meaty lusciousness than meat”!

4
1/2 lamb leg with bone (about 1 1/2 lb.)
1 lb. Chinese White Turnip
1 1/4 T. cooking wine
1/8 oz. coriander
1/2 tsp. white pepper powder
Spices for slow cooker lamb:

3 slices of ginger
3 pieces of myrcia leaves
1 piece of cinnamon
5 dried cloves
1 amomum seed
1 tsp. fennel seed
1 tsp. dried pepper corns
3 tsp. salt
Chop the lamb leg into 6~7 pieces with a cleaver. Crack the bones with the back of cleaver. This is to let the flavorings in through the breaches on the bone. Chop the turnip into 1 1/2” coarse pieces....
