Pamper yourself with this delicious salad that also happens to be good for you!

2 cups mixed salad greens (Romaine, spring mix)
1/2 cup chopped celery
2 green onions, chopped
4 oz. smoked salmon
1 tsp capers, rinsed (optional)
Freshly ground pepper
2 tsp. extra virgin olive oil
2 tsp. lime juice
In a bowl, mix the salad greens, celery and green onions. Place the salmon on top of the salad, then sprinkle with capers and black pepper. Dress with olive oil and lime juice. Serves 1
