Soba Noodle Salad with Peanut Sauce

A delicious and nutty flavored buckwheat noodle with fresh vegetables and a light peanut sauce.

4 oz. soba noodles
2 cups fresh mixed stir fry vegetables (I found a bag in the produce section)
1 tsp. minced ginger
2 garlic cloves, minced
2 tbsp. reduced sodium soy
1 tsp. sesame oil
1 tbsp. natural peanut butter
1 tsp. fish sauce
1 tbsp. rice vinegar
¼ cup julienne cucumber
2 green onions, chopped
2 tbsp. chopped cilantro
Bring 3 quarts of water to a boil in a large saucepan. Add soba noodles and cook for 4 minutes. Do not drain. Remove soba noodles from the water and place in a colander. Rinse with cold water. ...
