A simple and delicious Roman classic! Spaghetti with Pecorino Romano cheese and black pepper.

INGREDIENTS

1 lb Spaghetti
2 cups pecorino romano cheese, grated plus more for grating over finished dish
6-8 oz reserved pasta water
4 tablespoons freshly cracked black pepper
2 tablespoons extra virgin olive oil
for the parmesan frico bowl
1 cup Parmigiano Reggiano Cheese, shredded
2 1/2 teaspoons all-purpose flour

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
