Moist, spongy, gluten free, with a hint of spice makes this banana bread perfect for any occasion. With bits and pieces of banana and apples you are sure to have a burst of flavor in every bite. Light in sweetener and gluten free you won’t want to pass this recipe up! The best part? Egg is optional! So if you have a dairy allergy you can substitute with chia seed or any other egg replacer. If you want to be courageous skip the egg all together! Enjoy this yummy breakfast or dessert muffin.

1 cup walnuts
1 1/2 cups brown rice flour
3 tablespoons cinnamon powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 large apple
½ cup of water
2 eggs
1/2 cup of light Agave
1/2 cup melted coconut oil
4 teaspoons vanilla extract
1-2 bananas
Preheat oven to 375 F. Slice the apple into uniform pieces and place on stock pot. Pour in water, 1 tablespoon of cinnamon powder and 2 teaspoons of vanilla extract. Allow the apples to cook until soft....
