Spiced Moroccan Flavoured Macaroni with Lamb Mincemeat Bake

I was cleaning my pantry and noticed that we haven’t had macaroni in ages. I didn’t fancy just plain macaroni cheese so I thought I would add lamb mincemeat to it as well but make it spicy. I made up this recipe from the spices I bought back from Marrakech which is ground cumin and Ras El Hanout which is usually used in Tagines, goes very well with all lamb dishes. Don’t worry if you don’t have this as you can leave it out as the other spices will work well together.

1 tsp. ground cardamom
1 tsp. ground ginger
1 tsp. ground cumin
1 tsp. ras el hanout (spice mix from North Africa) if you don’t have this you can leave it out
1 tsp. ground garam masala
1 tsp. fresh coriander finely chopped
Few sprigs of fresh thyme
1 large onion diced
2 garlic cloves minced
Salt and pepper
500g lamb mincemeat
1 tbsp. olive oil
A little water
250g macaroni
Breadcrumbs for topping
1 tsp. ground ginger
1 tsp. ground cumin
1 tsp. ras el hanout (spice mix from North Africa) if you don’t have this you can leave it out
1 tsp. ground garam masala
1 tsp. fresh coriander finely chopped
Few sprigs of fresh thyme

500g lamb mincemeat

Breadcrumbs for topping
Place the mincemeat into a large bowl, add all of the spices and mix well with your hands. You can leave this in the fridge to marinate for a few hours.
