Spicy Taco Chicken Fingers

A savory twist to your typical chicken fingers...and a super easy recipe!

2 pounds chicken breasts, cut into thick strips
1/3 cup olive oil
1/4 cup hot sauce (I used buffalo style hot sauce)
3 tablespoons apple cider vinegar
3/4 teaspoon kosher salt
1/2 teaspoon ground black pepper
2 cups corn flakes cereal, crushed
2 tablespoons taco seasoning
1. Place the chicken in a zip-lock bag. Mix together the oil, hot sauce, vinegar, salt and pepper. 2. Place the mixture in with the chicken and turn the bag over a few times to coat the chicken thoroughly. Place in the fridge to marinate for at least an hour. You can marinate it overnight to promote tenderness. 3. When ready to prepare the chicken, preheat the oven to 350 degrees Fahrenheit. 4. Crush the corn flakes to a fine dust and toss together with the taco seasoning. Coat the chicken with the corn flake mixture, reserving the marinade. 5. Place the chicken in a greased pan. Cover with any leftover marinade and remaining cornflake mixture. 6. Bake in the oven for 20-30 minutes, or until the chicken is no longer pink. 7. Enjoy!
