Spinach and Ricotta Stuffed Mushrooms

These stuffed mushrooms are a delicious appetizer and they're a snap to make!

olive oil
1/4 medium onion, chopped
2 cloves garlic, minced
1 cup low fat ricotta cheese
1/2 cup grated parmesan cheese
1 cup chopped frozen spinach, thawed and well drained
1 egg
1/2 tsp salt
1/tsp pepper
1/4 tsp red pepper flakes
12 large mushroom caps
