Ingredients:

olive oil (for cooking the mushroom)
1 (10 oz) fresh baby spinach
5 eggs
1 cup shredded cheddar choice (or any cheese of your choice)
1 (8 oz) mushrooms chopped
1-2 tbsp. heavy cream or half and half
salt and pepper to taste
