1 (1-2lb) butternut squash
Extra virgin olive oil
¼ cup butter
1/3 cup flour
3 cups whole milk
1 tsp nutmeg
Salt & Pepper
12-15 Lasagna noodles, prepared according to package instructions
1 lb of spinach, wilted
½ cup grated parmesan cheese
4-5 fresh sage leaves
