Things I don’t enjoy about summer (a short list to get me through the next several weeks of winter): Sand. Although I love taking my kid to the beach (if we have an umbrella, cool drinks, & I get to read a book while she plays), I hate finding sand for days on end. 1 medium-sized butternut or acorn squash
1 tbsp olive oil
1 can full-fat coconut milk
1-2 tbsp red curry paste
crushed red pepper to top (optional)
