Strawberry Cream Cheese Coffee Cake - Gluten Free

This is a moist, creamy coffee cake with a crunchy coconut streusel topping. It has a ribbon of strawberry pie filling running through the middle to make it extra yummy!

1 pkg. (8 oz.) cream cheese, softened
1/2 cup (1 stick) butter, softened
1-1/4 cups sugar
2 eggs
1/4 cup milk
1 tsp. vanilla extract
2 cups gluten free all-purpose flour (I used Bob's Red Mill for this one)
1 tsp. xantham gum
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 can (21 oz.) strawberry pie filling

Topping:
1/3 cup butter, softened
2/3 cup brown sugar
1 tsp. cinnamon
2 cups flaked coconut
