We found this great new product at Costco “Organic Sprouted Bean Trio” by tru Roots. It’s a quick – cooking and nutritious blend of lentils, adzuki and mung beans. Perfect for soup, salad or side dishes. These are very easy to cook. Combine 1 cup sprouted bean trio with 3 cups water or broth. Bring to a boil, reduce heat to low and simmer for 5-10 minutes. Remove from heat, cover and let stand for 10 minutes or until desired tenderness is achieved. Drain excess water and serve. If you like le

1 Cup of uncooked beans
1 cup cherry tomatoes, cut in half
1 medium avocado, cut into 1/2? pieces
1/2 cup orange or yellow sweet peppers
fresh cilantro, rosemary or basil chopped
3 T. olive oil
1 T. balsamic vinaigrette
1/8 t. dry mustard
1 t. agave nectar or honey
salt and pepper to taste

1 medium avocado, cut into 1/2? pieces
