Sun-Dried Tomatoes Pasta Salad

4 cups of dry pasta (I used fusilli)
1 small jar (210 ml) of sun-dried tomatoes in oil (drained)
2 green onions (chopped)
1 small green bell pepper (diced)
1/4 cup of roasted pine nuts
1/4 cup of fresh parsley (chopped)
6 to 8 fresh basil leaves (chopped)
1/4 cup of olive oil
1/8 cup of red wine vinegar
1 garlic clove (minced)
1 tsp of honey
A pinch of red chili pepper flakes
Salt and pepper
Cook the pasta in salted water according to package directions. Once pasta is cooked, drain and rinse under cold water, set aside. Discard the oil from the sun dried tomato jar, and then chop them...

I love it because it's great for a holiday dinner. Everyone raves and it get devoured in no time. But, it's also perfect for busy weeknights. You can easily assemble this casserole ahead of time and stash it in the fridge until you're ready to eat it. Then just bake it off. 30 minutes and done!
