Dough
4 cups King Arthur Unbleached All-Purpose Flour
2 tablespoons potato flour, or 1/4 cup dried potato flakes
1/4 cup Baker's Special Dry Milk or nonfat dry milk
2 teaspoons salt
2 teaspoons sugar
2 teaspoons instant yeast
1 1/3 cups lukewarm water
3 tablespoons olive oil
Topping
1 egg white beaten with 1 tablespoon water
1/4 cup sesame seeds (optional) OR
1/4 poppy seeds (optional)
