Sweet Onion Barbecue Personal Pizzas

These personal-sized pizzas combine the mild flavor of mozzarella with the smoky tang of barbecue sauce and rich sweetness of caramelized onions. They are easy to make, and the best part is that each pizza is only around 300 calories!

6 Tablespoons Barbecue Sauce
1 1/3 cup shredded mozzarella cheese
1/4 cup minced cilantro, if desired

Preheat the oven to 425 degrees. Preheat a skillet on the stovetop to medium heat.
Slice onions into thin rings or wedges. Place in preheated skillet. Drizzle with oil. Cook onions, stirring occassionally, for 15-20 minutes until brown and caramelized, but not charred. Remove from heat.
Place pitas on a baking sheet, and spread each with 1 to 1 1/2 Tbs. of barbecue sauce. Sprinkle 1/3 cup of mozzarella cheese onto each pita. Top with caramelized onions and a sprinkle of cilantro, if desired.
Bake pita pizzas for about 7-10 minutes, until cheese is melted and slightly browned.
