1 pound steak (good quality and tender is best)
¼ cup rice flour
1 tbsp schezwan peppercorns
½ cup sugar
½ cup rice wine
2 tbsp rice wine vinegar
3 red chillies (thin sliced)
2 tbsp grated fresh ginger
5 cloves garlic (minced)
1 tsp chilli flakes
2 lemongrass stalks
5 lime leaves
salt and pepper
