Taco Lasagna

Layered taco bake - like a Mexican lasagna! Simple and yummy, and is still great reheated the next day. This would also be great with ground turkey. Add some freshness with some yummy toppings - lettuce, tomato, avocado, jalapenos, olives, sour cream, hot sauce, scallions and/or cilantro!

1 pound ground beef
1/2 medium onion
1 clove garlic, minced
1 can refried beans
1 packet taco seasoning
* water as called for on back of seasoning packet
5 flour tortillas (8-inch size)
1/2 cup Salsa con Queso
1 1/2-2 cups shredded Mexican cheese blend
topping options: lettuce, tomato, sour cream, avocado, olive slices, jalapenos, hot sauce, cilantro, and/or scallions
1) Preheat oven to 350 degrees 2) Brown ground beef, crumbling as it cooks 3) Once beef is almost cooked through, drain grease 4) Add onions and cook for 2-3 minutes 4) Add minced garlic and continue cooking until onions are translucent 5) Add taco seasoning and water and follow instructions on seasoning packet 6) Turn off heat and stir in Salsa con Queso 7) Spray springform pan with cooking spray 8) Now comes the layering - here's the order... tortilla - 1/3 meat mixture topped with 1/3 of shredded cheese - tortilla - 1/2 can refried beans - tortilla - 1/3 meat mixture topped with 1/3 shredded cheese - tortilla - remaining 1/2 can refried beans - tortilla - remaining 1/3 meat mixture topped with remaining shredded cheese 9) Bake for 15-20 minutes until cheese is melted and bubbly Top with all your goodies and enjoy!
