Taco Ravioli Bake

An easy oven dish that marries an Italian dish with a Mexican dish. A great flavor combination.

1 lb. ground beef (90% lean)
1/2 cup chopped onion
1 pkg (1.25 oz) taco seasoning
1 (15 oz) can tomato sauce
1 cup water
1 cup chopped fresh spinach
1 1/2 cups ricotta cheese
1/2 cup sour cream
1/4 cup chopped green onion
1 tsp. beef bouillon granules
24 oz pkg frozen small ravioli
1 cup shredded mozzarella cheese
Pre-heat oven to 350 degrees. In large skillet, cook ground beef with onion until beef is browned. Drain if necessary. Add tomato sauce, water, and taco seasoning. Bring to a boil and simmer 10 minutes. In separate bowl, mix together ricotta cheese, sour cream, spinach, green onion, and bouillon granules. Spread 1/2 cup of sauce in bottom of 11" x 7" casserole dish. Spread ravioli in dish, top with ricotta cheese mixture. Pour remaining beef mixture over all. Cover with foil and bake 40 minutes. Uncover, top with cheese and bake 10 more minutes.
