Lemon Meringue Pie

My lemon meringue pie recipe is absolutely irresistible. The flaky butter crust is filled with smooth tangy lemon deliciousness, then topped off with a gorgeous amount of fluffy, lightly sweet meringue.

Pie Crust:
2-1/2 c all-purpose flour ( sifted )
1 c unsalted butter ( cold, cut into pea-sized pieces )
1 tsp salt
1 tsp granulated sugar
1 tsp lemon zest
A few Tbsp ice water
Vegetable shortening for greasing pie pan
Lemon Filling:
5 large egg yolks
1-1/4 c water
1-1/4 c granulated sugar
1/3 c plus 1 Tbsp cornstarch
1/2 c lemon juice
1 Tbsp lemon zest
Meringue:
5 large egg whites ( at room temperature )
1/2 tsp cream of tartar
1/2 c granulated sugar
1/2 tsp vanilla extract

Pepperoni bread (aka pepperoni roll or stromboli) has always been a special treat for me. In my Italian family in southern New Jersey, we all savored pepperoni bread!This recipe makes enough dough for 2 loaves of pepperoni bread (you'll have to double the fillings though). So, my recommendation is to either double the "fillings" or save the other half of the dough to make a homemade pizza!

Pizza Dough:
1-1/4 c warm water
1 tsp granulated sugar
2 tsp instant yeast
2 Tbsp olive oil
3-1/2 c flour
1-1/4 tsp salt
Filling:
5 oz pepperoni ( sliced thin )
1 lb mozzarella cheese ( grated or cut into thin strips )
1/4 c Parmesan cheese ( grated )
1 large egg ( beaten )
2 Tbsp butter ( melted )
Your favorite Italian spices and herbs (garlic powder, oregano, basil, etc)

You will love this Coconut-Lime Shortbread Cookies Recipe! They are such a delight!!! Light. Buttery. Coconut-y. And lime-a-licious. :)

If my children had one “go to” meal that they could eat every week, it would be this one. I am not sure what it is about this chicken, but folks absolutely LOVE it. It has a salty sweetness and the ginger adds a unique savor to the dish. I hope it will become a family favorite of yours as well.

1 chicken cut up ( or you can use breasts or thigh pieces )
¾ cup soy sauce

Easy Flan

When it comes to deserts, I think one of the very best is flan. It looks impressive and with that smooth, velvety, creamy texture it doesn’t get much better. The wonderful thing about flan is that it looks a lot harder than it really is. So I got a little adventurous and put one in a Dutch oven. Faith loves ribs. I mean she really, really likes ribs. A while back she was sitting in a hospital waiting area flipping through magazines. She happened upon a recipe for ribs that only takes a little more than an hour, which almost seems too good to be true. Most of the time you have to bake them for hours.
