"Go To" Shoyu Chicken

If my children had one “go to” meal that they could eat every week, it would be this one. I am not sure what it is about this chicken, but folks absolutely LOVE it. It has a salty sweetness and the ginger adds a unique savor to the dish. I hope it will become a family favorite of yours as well.

1 chicken cut up ( or you can use breasts or thigh pieces )
¾ cup soy sauce
1 large pinch pickled ginger ( found at oriental markets or fresh ginger, sliced thin )
1 cup water
½ cup sugar
8
Bring soy, water, and sugar to a boil. Add chicken and ginger and simmer until chicken is tender. 30 - 45 until done, stirring occasionally. Remove chicken and thicken sauce with 2 T. cornstarch and water. ...

Easy Flan

When it comes to deserts, I think one of the very best is flan. It looks impressive and with that smooth, velvety, creamy texture it doesn’t get much better. The wonderful thing about flan is that it looks a lot harder than it really is. So I got a little adventurous and put one in a Dutch oven. I was super happy with the results, it turned out fantastic!

¾ cup sugar
4 eggs
1 (¾ cups) water
1 can sweetened condensed milk
½ tsp. vanilla
1/8 tsp. Salt
4
In a small cast iron skillet melt sugar on low heat in heavy skillet. The sugar will start to clump, but don’t worry and just keep stirring. It goes from clumpy to done in just a few minutes.Pour into 9 inch ...

One Hour Ribs

Faith loves ribs. I mean she really, really likes ribs. A while back she was sitting in a hospital waiting area flipping through magazines. She happened upon a recipe for ribs that only takes a little more than an hour, which almost seems too good to be true. Most of the time you have to bake them for hours. The combination of using a brine and finishing them on the grill was really good. We tried it for the first time and found it to be a keeper.

6 Quarts Water
1 Cup Sugar
1 Cup Course Salt
1 Head Garlic
Ribs ( You can use Baby-Back or Country Style Boneless )
6
Bring water to a boil. Add salt and sugar. Add garlic, smashed and unpeeled. Add ribs and boil for 30-minutes until tender. Transfer meat to a cooling rack or cookie sheet and allow to dry for ...
