A tasty weeknight Mexican style dish

1 pound ground beef
1 small onion diced
1 clove garlic diced
1 small can black olives sliced
1 package taco seasoning
1 16 oz bag frozen corn
1 4 ounce can green chilies diced
1 12 ounce can pinto beans drained and rinsed
1 16 ounce Mexican cheese blend
1 16 ounce bag of crispy crowns (tater tot)
1 10.5 ounce can enchilada sauce
brown ground beef with onion, garlic and taco seasoning until meat is brown and crumbly. add beans, corn, chilies ,enchilada sauce, tater tots and 3/4 of the cheese and pour into greased 9x13 baking dish. top with remaining cheese and the slice black olives. bake at 350 until heated through. serve with sour cream, diced tomatoes and shredded lettuce if you like, but is good plain as well.
