Texas Breakfast Tacos

A Texas breakfast taco may not be "pretty", but it is oh, so yummy! Warm, creamy, cheesy scrambled eggs. Decadent sausage and bacon. The full savory flavor of the Mexican-seasoned home fries. Topped with a nice bunch of melted cheese. All held together with a delicious, warm, toasted tortilla.

6 raw flour tortillas (can use corn, or ready-made, if preferred)
½ pound ground breakfast sausage
6 eggs, scrambled
6 slices of bacon
1 medium russet potato, skin on, cut into ½-inch cubes
¼ teaspoon salt
? teaspoon cumin
½ teaspoon onion powder
¼ teaspoon garlic powder
¾ teaspoon chili powder
12 tablespoons of shredded cheese blend, such as Mexican or Colby Jack
