Thai Chicken Curry
just by looking at this recipe I cant help but crave for it. Its very simple and delicious .a great way to bring the family together on sunday
2 bay leaf
handful fresh basil
2 Tbsp. vegetable oil
1/2tsp lemon grass
1large chopped onion
3 cloves garlic
2cm piece galangal
1cm ginger
1Tbsp. brown sugar
1/2 tsp. ground turmeric
1/2 tsp. ground coriander
2 fresh red chilies finely chopped
2Tsp fresh lemon juice
1/2tsp ground cumin
4Tsp fish sauce
CHICKEN
250gms boneless chicken stripped
salt
black pepper
half cooked vegetable/Peas
1cup coconut milk
1Tsp olive oil
1Tsp extra olive oil

CHICKEN
250gms boneless chicken stripped

1cup coconut milk
1Tsp olive oil
1Tsp extra olive oil
put all ingredient in a blender, blend until it forms a paste.in wok, stir fry chicken in batches over high heat for three minutes. Put it aside on a plate. Put another oil in a wok, stir fry the curry paste until it fragrance, add coconut milk, let it simmer for a few minutes or until it reduces, add vegetable simmer, add the stir fried chicken simmer for five minutes ,remove from heat. serve with rice
