Thai Green Chicken Curry

When I go to a Thai restaurant I always order chicken pad Thai but this time I decided to order a Thai green chicken curry, it was full of flavour and that’s when I decided to try and make my own.

400 g diced chicken
1 lemon grass
4 garlic cloves
Large piece of galangal or ginger
½ cup of fresh basil leaves
½ cup of fresh coriander
Six shallots
4 kaffire lime leaves
1 teaspoon black peppercorns
1 teaspoon ground cumin
14 teaspoon ground coriander
1 teaspoon fish sauce
6 green Thai chillies
½ cup of light coconut milk
1 tablespoon vegetable oil
Salt and pepper to taste
Put all of the above ingredients apart from the coconut milk, salt and pepper into a blender. Add a little water and blend to fine paste. Place your diced chicken in a bowl and mix in the paste. Leave in...
