Thai shrimp coconut curry soup. Sweet and spicy broth loaded with a vegetables.

2 tbsp, olive oil
2 medium carrots, crinkle cut
2 Cloves Garlic, minced
1 tsp ginger, minced
3 tsp red curry paste
2 (14.5) cans of low sodium broth
1 tsp fish sauce
¾ cup Coconut Milk
1½ cup Shiitake mushrooms
16 Large Shrimp
2 tbsp green onion
2 tsp sriracha
2 tbsp, fresh Lime
2 tbsp fresh, cilantro

3 T unsweetened cocoa powder
Pinch salt
3 eggs
1/2 c salted butter
1/2 c light corn syrup
1 t vanilla extract
1 unbaked 9-inch pie crust

  1. Preheat oven to 350 degrees F. In a large bowl, whisk together sugar, cornmeal, cocoa and salt. Add eggs, melted butter, corn syrup and vanilla; mix well. Pour into unbaked pie crust.
