Thai Style Lobster Salad

This is just an amazingly healthy salad – with lobster and vegetables as the major ingredients, and the dressing contains no oil or any high-fat. What makes this dish appetizing is a rich mix of exotic natural spices.

2 lobsters (about 12 oz. meat)
2 oz. endive
2 oz. cherry tomato
2 oz. radish
1 oz. spring onion
1/2 oz. green onion
1/4 oz. coriander
1 T. ground roasted peanut
6 tamarinds (about 1 oz.)
1 red chili pepper
1/2 oz. coconut sugar
1/4 oz. lime
2 T. fish sauce
1/2 tsp. salt
2 myrcia leaves
1/2 tsp. Chinese pepper
1/2 tsp. fennel seed
1/2 tsp. fenugreek seed
Wash the lobsters and devien from the back. Put the myrcia leaves, Chinese pepper, fennel seed and fenugreek seed in a wok of water. Heat the water to a boil, and then blanch the lobsters for 2 minutes....
