You will never make Mexican Rice from a box again! It is delicious and easy!

1 can Rotel (diced tomatoes and green chiles)
1/2 medium onion (quartered)
2 cups white rice
1/3 cup canola oil or vegetable oil
4 cloves garlic (minced)
1 3/4 cup low sodium chicken broth
1 tablespoon tomato paste
1 1/2 teaspoon salt
