The Best Vegan Sugar Cookie

This recipe for The Best Vegan Sugar Cookies is easy to make, perfect for Valentine’s Day, extremely soft, with a slightly sweet frosting.
For Cookies:
3 cups all purpose flour
1 tbls cornstarch
1 and ½ tsp baking powder
½ tsp baking soda
½ tsp salt (I use pink Himalayan)
1 cup vanilla sugar (sugar that has been perfumed with vanilla bean pods)
½ cup butter, softened
½ cup plain greek yogurt (I use coconut milk greek yogurt)
2 flax eggs (2 tbls flax meal mixed with 6 tbls water and allowed to sit until thick) or real eggs
1 tbls vanilla extract
For Frosting:
5 tbls butter, softened
2 cups powdered sugar
2 tsp vanilla
enough coconut milk to make a spreadable consistency
