The Best Veggie Gratin is a delicious, easy to make, vegetarian casserole. Made with yummy multi-layered veggies in a cheesy egg custard; this is one kid-pleasing dish!

3 eggplants, peeled and sliced into rounds ¼-inch thick
2 tablespoons kosher salt, for soaking
4 medium heirloom tomatoes, thinly sliced
1 medium zucchini, sliced into rounds ¼-inch thick
½ cup olive oil, plus some for drizzling
Salt and Pepper, to taste
1 medium onion, sliced very thin
3 medium garlic cloves, minced
2 eggs
1 cup heavy cream
¼ cup Parmesan cheese, finely grated
¼ cup finely chopped parsley
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon salt
¼ teaspoon pepper
