Three Bean Wild Rice Salad

On hot summer nights, turn to this Three Bean Wild Rice Salad for an easy and delicious light dinner that your family will DEVOUR. It also makes the perfect side dish for barbecues, parties, cookouts and more!

2 cups cooked wild rice blend ( cooled )
1 (15 oz) can kidney beans ( rinsed and drained )
1 (15 oz) can black beans ( rinsed and drained )
1 (15 oz) can garbanzo beans ( rinsed and drained )
½ red onion ( diced )
½ cup chopped cilantro
1 jalapeno ( diced )
Dressing
3 tbsp red wine vinegar
2 tbsp extra virgin olive oil
4 tbsp sugar
½ tsp salt
½ tsp fresh ground black pepper

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
