Toasted Coconut Banana Bread

A very moist banana bread with a hint of coconut. This bread is very easy & very flavorful! Next time I think I may toast the pecans since it would help bring out the nutty flavor of the pecan. Another variation would be to add some crushed pineapples for a pina colada muffin.. Yum

1/2 cup Vegetable Oil
1 cup Sugar
2 Eggs
1 tsp Vanilla extract
1 tsp almond extract
2 1/2 cups All purpose flour
1 1/2 tsp Baking powder
1 tsp Baking soda
1/2 tsp Salt
1 cup Ripe bananas (about 3 medium bananas)
1 cup Coconut milk
1/2 cup Toasted coconut
1/2 cup Pecan pieces
