•2 tablespoons good olive oil
•1 Large Onion, chopped
•1 carrot, chopped
•2 Stalks celery, chopped
•3 cloves garlic, chopped
•4 cups chicken stock
•1 28-ounce can crushed tomatoes
•½ cup grated Parmesan cheese
•salt and freshly ground
•Red pesto
•For the croutons:
•4 slices of thick sliced white bread, toasted
•2 tablespoons butter
•8 ounces white cheddar cheese, grated
