Super easy summer casserole. Its a great way to use some of the tomatoes out of your summer garden! I like to make this as a side for dinner, but it is wonderful on its own and makes a great breakfast option too!

6 large Tomatoes
1 Cup Onion (Chopped)
2 Cups Spinach (cooked)
1 Cup Cheese
6 Eggs
1/2 Cup Milk
1 Cup Bread Crumbs.

1 Cup Bread Crumbs.
Food Prep:
Slice 6 tomatoes,
Chop 1 medium onion (you need 1 cup chopped).
Cook your spinach so you have 2 cups (I use frozen).
In a large bowl, mix 6 eggs, 1/2 cup milk and 1 cup cheese.
