2 cups uncooked bow tie pasta
2 cups chicken- cooked & cubed
1 medium zucchini, sliced
1 1/2 cups sliced fresh mushrooms
1/2 cup chopped red pepper
3 tbsp butter, divided
1/4 cup lemon juice
2 tbsp chicken broth
3/4 cup shredded parmesan cheese
3 tbsp minced fresh basil or 1 tbsp dried basil
Cook pasta according to package directions. In a large skillet, saute the chicken, zucchini, mushrooms, and pepper in 2 tbsp butter for 4 -5 minutes. Add the lemon juice and broth. Bring to a boil. Reduce heat; cook an stir for 2 minutes or until heated through. Drain pasta; add to skillet. Stir in Parmesan cheese, basil, & remaining butter. Garnish with cheese and serve with a slice of garlic bread.
