Vegan Caesar Dressing (and a cool salad suggestion!) Ready in 10 mins

Luckily my brother, a talented professional chef, allowed me to publish his vegan caesar dressing recipe. And I must admit, it’s rather awesome!

For the salad:
1 serving of your favourite salad - for example: chopped lettuce, grated carrots, cherry tomatoes. A mixed bag of salad is an easy option.
1 tbsp olive oil
A couple of slices ciabatta, baguette or a nice whole grain bread
1 garlic clove, chopped
For the dressing:
50ml soy or almond milk (or use your favourite vegan milk)
2 tbsp olive oil
½ tsp garlic powder (or 1 more clove garlic,chopped)
1 tsp mustard
1 tsp tomato paste
2 tsp vinegar
Salt & pepper to taste

Prep your salad - shred the lettuce, chop the tomatoes, grate the carrot (or whatever you’ve chosen) and put it in a large bowl.
